I love bread. I’d happily eat bread for breakfast, lunch and dinner. It’s not unusual that I do. I pretty much invariably start my day with porridge, but it’s always followed by toast (ah… the joy of a beautiful toasted piece of sourdough with marmalade and a black coffee). Sandwiches for lunch more often than not. And then we just need pizza, or flatbreads, or naans, or flour tortillas or … with dinner and we’ve made it to three.
But sometimes my conscience gets the better of me…
E.g. I know that I’m going to have pizza for dinner and I think “I really ought to have something non-bread based for lunch”. What do I do then? Well there, are lots of good options, and which we go for depends in part on the time of year. But more often than not recently, it’s been cauliflower that we’ve been turning to. Don’t know why, but it works! Anyways, I thought I’d share our current top recipes for healthy cauliflower based lunches with no bread in sight. Other than maybe just a small piece on the side to mop up the juices, or a pita to dip in that hummus… Shhh… Don’t tell anyone and then it won’t count right? Seriously, everything is better with bread, but it is purely optional here!
- Cauliflower, chickpea and broccoli salad. Great light lunch that looks every bit as good as it tastes.
- Roasted cauliflower with barley and herbs. A fabulous tangy hit of lemons and herbs.
- Broccoli and cauliflower salad with lime and coriander with a green salad and some hummus on the side. [Definitely even better with some pita or flatbreads though]
